- 7 cups coconut water (fresh)
- 5 tablespoons water kefir grains
- Ceylon cinnamon
Preparation
Take a glass jar and pour the coconut water in it, adding the kefir grains in it. Cover the jar with a gauze and secure with a rubber band, then leave the glass to ferment for 2 full days (no longer!). When fermented, the drink will have a lighter color and the grains should go to the top. You can use the grains for a new batch later. For a sweeter flavor, we suggest adding a Ceylon cinnamon stick in the drink while it ferments. If you like it sour, however, you can go without it.
